Holiday Cranberry French Toast Bake

This Christmas morning, treat the whole family by making this delicious gluten-free Holiday Cranberry French Toast Bake.

This recipe starts with a base of gluten-free cubed bread. Followed by fresh tart cranberries tossed in a brown sugar cinnamon mixture. Then, topped with pecans and finishing off the dish with a decadent drizzling of warm homemade caramel topping.

I used Canyon Bakehouse gluten-free 7-grain bread, but you can choose any brand of gluten-free bread. Or, if you’re not trying to avoid gluten, try a nice hearty country bread or even sourdough would be awesome.

You’ll love all of the delicious flavors in this festive breakfast bake. I think you’ll find this holiday breakfast will soon become your family tradition for years to come.

Let’s Make Some Holiday Cranberry French Toast Bake

First, cut bread into 1 inch cubes and place in a greased 9×13″ casserole dish.

In a bowl, mix together the cranberries, brown sugar, cinnamon, and melted butter until cranberries are fully coated.

Next, sprinkle cranberries all over bread cubes. Then, sprinkle chopped pecans on top.

In another bowl, whisk together the milk, eggs, cinnamon, and vanilla extract until combined. Pour over bread and cranberries, covering well.

Cover and refrigerate for a few hours or even overnight.

When ready to bake, uncover pan and stir to make sure bread cubes are coated evenly. Preheat oven to 350°.

Time to make the caramel topping.

Combine all topping ingredients in a saucepan over medium heat. Continuously stirring until brown sugar is dissolved and mixture is boiling. About 6-7 minutes.

Drizzle topping all over french toast bake and bake uncovered in a 350° oven for about an hour. Yours may need to bake less depending on your oven temperature.

Note: You may choose to use half of the caramel topping if you desire a little less.

Make sure French toast bake cools down for about 5 minutes before serving and eating.

Makes about 8-10 servings.

Storing the Cranberry French Toast Bake

You can transfer this French toast bake into an airtight container and it will last about 3-4 days in the fridge.

For the French Toast:
  • 1 lb. gluten-free bread, cut into 1 inch cubes
