Summer is in full swing and these Gluten-Free S’mores Cookie Bars will be the prefect dessert after a long Summer day. These cookie bars are a chocolate chip cookie with S’mores infused in them.
As soon as you cut into these bars and start pulling them apart, you will see that ooey-gooey marshmallow…that’s when you’ll know these bars are going to be delicious!

Use Room Temperature Ingredients
Make sure you take the butter and eggs out of the fridge and keep them on the counter for at least 30 minutes to an hour to bring them to room temperature.
Using room temperature ingredients ensures that these bars bake up better and more even.
How to Make Gluten-Free S’mores Cookie Bars
First, preheat your oven to 350 degrees Fahrenheit.
In a large bowl, cream together the softened butter and both sugars.
Then, add in the eggs and vanilla extract and mix on high for at least a minute.
Now, add in the salt, baking soda, and Gluten-free all purpose flour. I love using Bob’s Red Mill 1 to 1 Gluten-Free flour.
Once the cookie batter is combined then add in the graham crackers crumbs and semi-sweet chocolate chips and mix by hand.
Once the the graham cracker crumbs and chocolate chips are mixed in well, press half of the cookie dough into the bottom of the 9×13 baking pan (The other half will be used for layering on top).
Next, sprinkle the mini-marshmallows (middle layer) on top of the cookie dough layer.
Lastly, crumble the remaining half of the cookie dough on top. You can also sprinkle a little more marshmallows on top if you’d like it extra gooey, but that’s totally optional.

Bake at 350 degrees for about 20 minutes. Keep an eye on yours because yours may need to bake a little longer depending on your oven.

Gluten-Free S’mores Cookie Bars
Ingredients
- 1 cup butter
- 1/2 cup brown sugar
- 1 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp salt
- 1 tsp baking soda
- 3 cups Gluten-Free All Purpose Flour
- 2 1/2 cups graham cracker crumbs
- 1 cup semi-sweet chocolate chips
- 3 cups mini-marshmallows
Instructions
- First, preheat your oven to 350 degrees.
- Note: We prepped our 9 x 13 baking dish with foil hanging over the edges and greased it with cooking spray. This will help you to be able to easily lift the cookie bars out of the baking dish so you can cut them into squares.
