These Gluten-Free Peanut Butter Pretzel Brownies are like a Reese’s Peanut Butter Cup just in a fudgy brownie form.
It all starts with a bottom layer of fudgy brownie; the middle layer is a delicious creamy peanut butter filling and crunchy chopped pretzels. Then, it’s cloaked in smooth semi-sweet melted chocolate.
I also love the addition of salty, crunchy pretzels. It gives it just the right amount of salty flavor to compliment the sweet layers in this recipe.
These are pretty simple to make, too. All you need is a store bought gluten-free brownie mix, and a few other simple ingredients.
How to Make Gluten-Free Peanut Butter Pretzel Brownies
Grease a 9 x 13 baking dish and set aside (please use this size baking dish).
Make and bake brownies according to instructions on back of YOUR package. I used the Bob’s Red Mill Gluten-Free Brownie Mix, just for reference. But do what your brownie mix instructions say to do!!
Pour batter into 9 x 13 baking dish and bake.
While brownies are baking, make the peanut butter filling. In a medium size bowl, combine melted butter, peanut butter, powdered sugar, and graham cracker crumbs. For best results, use hand mixer. You can also stir by hand, if desired.
Once brownies are cooled down a bit (about 30 minutes) spread peanut butter mixture over brownies until covered. I like to dollop peanut butter mixture all over brownies and then carefully spread around with spatula.
Chill in fridge for 20 minutes.
Meanwhile, chop up pretzels until you have desired size. I like some bigger pieces and some smaller and even crumbs.
Next, in a small saucepan, melt chocolate chips and oil together. Make sure and stir continuously so the chocolate doesn’t burn!
Scatter pretzel pieces all over peanut butter layer and gently press down so they stick in.
Pour melted chocolate over pretzels and carefully spread around with silicon spatula so it covers completely.
(optional) add additional chopped pretzels on top of chocolate.
Return to refrigerator to chill just until chocolate sets. Cut into squares before chocolate becomes too hard, otherwise it will be too hard to cut into.
Makes about 18 squares.
