Gluten-Free Honey Walnut Bread

This Gluten-Free Honey Walnut Bread is super easy to make and doesn't require any yeast. It's got a delicious mild honey flavor that melts in your mouth. Toss in some chopped walnuts and you have yourself the perfect delicious bread.

Ingredients

  • 1 1/2 c. honey
  • 1 1/2 c. milk
  • 3/4 c. granulated sugar
  • 3 3/4 c. gluten-free flour
  • 1 1/2 tsp. baking soda
  • 1 1/2 tsp. salt
  • 1 1/2 c. chopped walnuts
  • 1/3 c. oil
  • 4 TBSP. butter, melted
  • 2 eggs, beaten
  • 1/2 tbsp. vanilla extract

Instructions

  • In a large saucepan, bring the honey, milk, and sugar to a boil, then take saucepan off of the heat and let cool. Make sure to keep an eye on the mixture because it could boil over and cause a mess.
  • Meanwhile, in a large bowl, sift dry ingredients together.
  • Add in the nuts, oil, melted butter, eggs, and vanilla extract. Add the cooled honey mixture and beat for about two minutes.
  • Pour batter into well-greased loaf pans. *This recipe will make one large loaf and 4 small loaves or 4 medium sized loaves. 
  • Bake at 325 degrees F. for about 1 hour or until toothpick inserted in middle of bread comes out clean. 
  • NOTE: When baking small loaves, reduce time in half. In other words, the small loaves should only bake for about 30 minutes or until toothpick inserted in middle of bread comes out clean.
