Ingredients
  

  • 4 oz. semi-sweet chocolate chips
  • 1/2 cup plus 2 tbsp. butter, divided
  • 2 cup sugar
  • 4 eggs, divided
  • 2 tsp. vanilla extract
  • 1 cup gluten-free all purpose flour
  • 8 oz. cream cheese, softened
  • 1 tbsp. cornstarch
  • 14 oz. can sweetened condensed milk
  • 2 tsp. peppermint extract
  • green food coloring, optional
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy whipping cream
  • 1 tbsp. light corn syrup
  • crushed candy canes and sprinkles, optional

Instructions
 

  • Preheat the oven to 350 degrees.
  • To make the bottom layer, melt 4 oz of semi-sweet chocolate chips with 1/2 cup butter until smooth.
  • Then, combine this melted chocolate with 2 cups sugar, 3 eggs, 2 tsp vanilla extract, and 1 cup gluten-free flour. Blend well.
  • Spread your mixture on a greased 9 x 13 pan.
  • Bake for 12 minutes.
  • For the middle layer, cream together 8 oz cream cheese, 2 tbsp softened butter, and 1 tbsp cornstarch until fluffy.
  • Slowly add in the 14 oz. of sweetened condensed milk, 1 egg, and green food coloring, if desired.
  • Pour mixture over the bottom layer while still hot. Then, bake for an additional 30 minutes, or until set.
  • For the top chocolate ganache layer, melt 1 cup semi-sweet chocolate chips, 1/2 cup heavy whipping cream, and 1 tbsp. light corn syrup together. Remember to stir constantly until mixture is smooth.
  • Spread over the peppermint cheesecake layer. Add crushed candy canes and sprinkles and chill in refrigerator until set.
