For the Gingerbread:

  • 1/2 c. butter, softened
  • 3/4 c. brown sugar, packed
  • 2 large eggs, room temperature
  • 1/2 c. unsulphured molasses
  • 1 tsp. vanilla extract
  • 1/2 c. milk
  • 2 1/2 c. Bob's Red Mill all purpose 1 to 1 baking flour, or regular all purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 3 tsp. ground ginger
  • 1 tsp. ground cinnamon
  • 1 tsp. ground cloves
  • 1/2 tsp. ground nutmeg
  • 1 c. dried cranberries, optional

For the Frosting:

  • 4 oz. cream cheese
  • 1 1/2 c. powdered sugar
  • 1 tsp. vanilla extract
  • 1 TBSP. milk
  • orange zest, optional
