These apples are stuffed with a sweet brown sugar cinnamon mixture with added walnuts and dried cranberries. Then, they're each drizzled in buttery maple syrup. These are perfect for brunch or dessert.
Using an apple corer, scoop out the core and seeds of each apple. Make sure the opening at the top of the apple is wide enough for you to stuff mixture into. Set apples aside.
Next, in a bowl, mix together walnuts, cranberries, brown sugar, and spice.
Place all of the apples in a 9x13" glass baking dish. Stuff each apple with the brown sugar mixture.
In a small dish, mix melted butter and maple syrup together and drizzle over apples. Then, pour apple juice around bottoms of apples.
Cover with aluminum foil and bake at 350 degrees F. for 50 minutes. Then, uncover and place back into oven for another 10 minutes.
To check if apples are tender, gently pierce side of apple with fork and if it goes in easy enough, it's done. If they need to bake a little longer, then bake uncovered for an additional 5 minutes or until apples are fork tender.
Let apples cool down a bit before serving and eating. These can be served with vanilla ice cream, whipped topping, canned milk, or as is.
Important to note: If using smaller to medium sized apples, bake for about 40 minutes covered and then an additional 20 minutes uncovered or until apples are fork tender.
